Healthy Ice Cream and Frozen Treats

When the weather gets hot, who doesn’t want ice cream?

I’ve been on the Primal Diet since 2000 and these have been our family’s GO TO’s every Summer (and sometimes Winter as well).

Berry Good Healthy Ice Cream

(1 serving)

  • 1 egg
  • 4 tablespoons raw cream
  • 3 tablespoons fresh Berries – prefer the smaller, darker, less sugary, and more wild berries such as Blueberries, raspberries, boysenberries and blackberries
  • 1 tablespoon unheated honey

Blenderize all ingredients together in a 12-ounce jar on medium speed for 10 seconds. Pour into ice cream maker and churn until firm. Or, place in the freezer and mix every 10 minutes until frozen.

Frozen Banana Cream Pie

(fills a standard glass pie pan)

CRUST

  • 2  cups raw walnuts
  • 2  tablespoons unsalted raw butter
  • 2  tablespoons unheated honey

FILLING

  • 4  organic soy-free eggs
  • 12  non-steamed dates
  • 3  organic green bananas (optional)
  • 16  tablespoons unsalted raw butter
  • 4  drops organic vanilla extract (optional)
  • 1  teaspoon cinnamon powder (optional)

TOPPING (optional)

  • 30  ounces raw cream
  • 2 to 4 tablespoons unheated honey

Ahead of time: set butter on counter and warm to room temperature the night prior. Place pie pan in freezer an hour before preparing.

CRUST: Place walnuts, butter, and honey in a food processor and blend until ingredients form a ball. Butter bottom and sides of a 8-or 9-inch glass pie-dish. Spread nut mixture and flatten evenly into the bottom of the pie dish. Chill in freezer for 15-minutes while making filling.

FILLING: Remove stones from dates and chop dates. In a blender, blenderize eggs, 1 drop vanilla extract, chopped dates, 1 banana (break into small pieces) and butter (room temperature) together until thick.

Slice 2 bananas lengthwise into halves. Slice laterally into 1/8-inch pieces. Fold Bananas into Filling mixture. Pour and spread evenly over crust and chill in freezer for 20-minutes.

TOPPING: Blenderize 5 ounces cream and 2 teaspoons honey in a 8-ounce jar on low speed until it is fluffy and stiff. Repeat two or more times, each time with 5 ounces of cream and 2 ounces of honey in a 8-ounce jar. Remove pie from freezer and top with whipped cream. Let stand in refrigerator for 2 hours.

Alternative Topping: Add 3 Tablespoons fresh lime juice to cream and honey as stated above.

Blenderize: When I say blendarize, I mean remove the blades, gasket, and base from an Oster blender and place these with the gasket between the glass and the blade on a narrow mouth Mason jar. This works great to prevent a bunch of air and oxidation to enter your mixture.
